Ingredients:

For the base:

For the stuffing:

  • 300g of fresh goat's cheese
  • 200g of spreadable cheese (Philadelphia type)
  • Juice and grated zest of 1 lemon
  • 2 tablespoons chopped fresh herbs (basil, parsley, chives, etc.)
  • Salt and Pepper To Taste

For the seasoning:

  • Dried tomatoes in oil
  • Origan
  • Extra virgin olive oil
  • Salt and pepper

Instructions:

  1. Start by preparing the base: finely chop the taralli of various flavors in a food processor until you obtain a consistency similar to that of crumbled biscuits. Mix the crumbled taralli with the melted butter until you obtain a smooth mixture. Press this mixture onto the bottom of a springform pan (approximately 20-22 cm in diameter) lined with baking paper. Refrigerate while you prepare the filling.

  2. In a large bowl, mix the fresh goat cheese and cream cheese until smooth. Add lemon juice and grated zest, chopped fresh herbs, salt and pepper. Mix well until you obtain a homogeneous mixture.

  3. Pour the cheese mixture onto the taralli base in the pan and level the surface with a spatula.

  4. Cover the cheesecake with cling film and place it in the refrigerator for at least 4 hours, or better overnight, so that it solidifies well.

  5. Before serving, decorate the cheesecake with cherry tomatoes cut in half, fresh basil leaves, a drizzle of extra virgin olive oil, salt and pepper.

  6. Cut the cheesecake into wedges and enjoy!
